Midleton Dair Ghaelach Grinsell's Wood Tree No.7
Irish whiskey finished in virgin Irish oak (Dair Ghaelach in gaelic). Single pot still whiskies that have been matured for between 15 and 22 years. The initial maturation was in ex-Bourbon casks.
Sustainable oak from trees from Grinsell's wood at the Ballaghtobin estate was transported to Spain in 2010 to be expertly quarter-sawn, then sent to a cooperage in Jerez to be turned into hogsheads.
